How We Make Our Chili Saté

Our chili saté is made in two carefully crafted stages: a slow herb infusion and a gentle low-temperature cook. We start by slowly infusing oil with a blend of fresh aromatics and dry herbs, including ingredients like garlic, ginger, shallots, cinnamon sticks, and peppercorns. This infusion happens over low heat for hours, allowing the oil to pull deep flavor, aroma, and warmth from every ingredient without scorching or bitterness.

Once the infusion is complete, we filter the oil to remove the herbs and aromatics, leaving behind a clean, deeply flavored base.

That infused oil becomes the foundation of our chili saté.

Next, we slowly cook fresh garlic, lemongrass, and Thai chili peppers in the infused oil over low temperature for hours. This step is done gently and intentionally to preserve the natural flavor, vibrant color, and aromatic character of the ingredients.

Instead of frying everything hard and dark, we allow the flavors to develop slowly so the sauce stays rich, layered, and balanced.

To finish, we add fish sauce for savory depth and the right amount of saltiness to bring the entire jar together.
